The Fulton Galley is a food hall and restaurant accelerator located in a 10,830 sq. ft. former industrial space in the Fulton Market District in Chicago’s bustling West Loop neighborhood. The mission of the Galley is to serve as a low-risk launch space for aspiring restaurateurs; it hosts five rotating dining concepts, seating for 253, a nearly sixty-foot bar, private event space, and a 42-seat sidewalk café.

Elements from the Fulton Market’s industrial past such as heavy timber columns and beams, exposed brick walls and concrete floor are enhanced with details including a travertine-clad feature wall, green feature walls with real preserved plants, and custom banquettes made from reclaimed wood. Oversized sliding glass doors that remain concealed during meal service can be employed after dinner to create a cozy cocktail lounge.

Throughout the space there are varying textures of a consistent palette of materials. The natural colors and materials are complemented by playful furniture pieces and rotating local art that mirrors how the dining concepts will change over time.
